Heart Healthy Grilled Mackerel Recipe

Omega-3 fatty acids are a great benefit to the prevention and reduction heart disease risks, high blood pressure which can lead to stroke and heart attack; and prevent painful conditions such as arthritis. Omega-3 fatty acids are also a key nutrient the brain needs to function properly. A great way of getting these omega-3 fatty acids is fish. What can you do with fish you say? Fresh Mackerel (boneless filets,slightly scored)
1/4 cup Olive Oil
2 tsp Sea Salt or alternative
1 tsp Freshley ground pepper
1 cup unsalted butter
1 Freshley chopped Onion
1 small bundle of Fresh Watercress
1/2 cup of Whipping cream
1 tsp Pommery Mustard
1/2 tsp white pepper
Pre-heat oven to 180 degrees(F). In a medium sauce pan boil 1/2 cup of water. Add parsley to boiling water and simmer for 4 minutes, then remove and strain.
In a seperate sauce pan, add the fresh chopped onion and simmer until they are soft. Once softened, add in watercress and simmer for just a few minutes. While simmering, add the parsley,black and white peppers and your cream. Stir the ingredients and cover to boil. Remove from heat and add to a puree machine and blend mix, adding extra spice to taste. Set aside on a large tray to cool.
Set grill to High. Season your fresh Mackerel with sea salt and black pepper and place them on the hot grill with the skin up. Grill Mackerel for about 3 minutes on each side, depending on filet thickness, squeezing lemon juice on them when they’re done.
Place Mackerel on plate and slather your Herb puree over it as a sauce. Voila! You have made Grilled Herb Mackerel a tasty dish that is heart healthy and easy to make!
