Quick Crunchy Flounder

Fish Recipes: Quick Crunchy Flounder

2 cups corn flakes
¼ cup mayonnaise
2 tsp. lemon juice
Seasoned salt to taste

Crush corn flakes. Set aside.
Combine mayonnaise, lemon juice and seasoned salt. Spread on both sides of fish then coat with crushed corn flakes. Place fillets on a rack of a lightly greased broiler pan. Bake at 400 degrees for 1`0-15 minutes or until fish flakes easily.

Shrimp Cakes

½ lb peeled and deveined shrimp minced
1 clove garlic
2 scallions
¼ tsp salt
½ cup flour
4 tsp sherry
Olive oil

Mix all ingredients except oil in blender. Add water as needed making a thick batter. Let stand 1 hour. Drop by teaspoon into 2 inches of hot oil. Flip when golden brown.

Fish Chowder

½ small onion
1 stalk celery
¼ tsp thyme
¼ tsp parsley
1 bay leaf
1 small potato minced
1 tbls butter ¼ lb fish
1 cup milk
½ cup water

Sauté onion and celery in butter until soft. Pour in milk and water. Add parsley, thyme, bay leaf and potato. Cover pot and simmer 5 minutes. Cut up fish in small pieces and add to pot. Cover and simmer another 5 minutes. Season with salt and pepper and worcestershire sauce to taste.

Smoked Kingfish Dip Recipe

Ingredients

1 package smoked kingfish (fresh caught and smoked)
mayonnaise
Worcestershire sauce
prepared horseradish
Cajun seasoning
sliced lemon
finely diced onion
finely diced jalapeno

Remove skin and cut out dark meat from fish. Smash fish with fork in a mixing bowl.
Mix in a heaping tablespoon of mayo, a teaspoon or two of horseradish, splash of Worcestershire, tablespoon of onion, teaspoon of Jalapeno. Squeeze in a lemon slice and sprinkle with Cajun seasoning. Mix thoroughly, chill for ½ hour in fridge & mix again. Serve with your favorite crackers or try toasted bagel slices.

Cod Fish Cakes

Cod Fish Cakes
2 lbs. Cod
1 lb. potatoes

Boil separately until done.
Mix together with onion, salt and pepper, and parsley. Refrigerate overnight. Next day lightly beat one egg. Add to mixture. Mix well. Make patty. Fry in ½ inch hot oil.
