Oatmeal Cookie Recipe: Oatmeal Raisin Cookies
An easy oatmeal cookie recipe: Oatmeal Raisin Cookies are second only to Chewy Noels as my favorite sweet dessert recipes. Growing up my mom would always make these irresistible sweets for us during the holidays. For plain oatmeal cookies leave out the raisins.
1 cup shortening
1 cup granulated sugar
1 cup firmly packed light brown sugar
2 tblsp. water or milk
1 ½ tsp. vanilla
1 ½ cup all-purpose flour
1 tsp baking soda
½ tsp. salt
4 cups oats
1 cup raisins (optional)
In a large bowl cream shortening with sugars, adding slowly. Add eggs, milk and vanilla. Beat well. Add flour, salt and soda. Beat well. Stir in oats and raisins. Mix well. Drop by rounded teaspoonful onto ungreased cookie sheet about 2 inches apart. Bake at 350 degrees for about 13 minutes or until golden brown. Cool on wire racks. Makes approx. 42 cookies.
