The humble sweet potato is such a part of our lives these days that we so often just use it baked or fried without thinking of other ways we could use it to improve our dishes. Sweet potatoes are a wonderful vegetable, in fact they contain more vitamins and nutrition than potatoes. But if we deep fry them we are adding too much fat. Better to boil, bake or steam them. - Spinach and Sweet Potato Curry
I just love making curries. I don’t mind what sort of curry it is, I just love the rich flavor and smooth experience of eating curry. Of course, there are a million different ways we can make a curry. Let’s look at a healthy vegetarian spinach and sweet potato curry.
Ingredients:
Olive oil: a tablespoon
1 Onion, diced
Curry paste: 2 tablespoons
Coconut milk: 400g
Sweet potatoes: 900g (peeled and cubed)
Spinach: 250g (shredded by hand)
Method:
- Heat the olive oil in a frying pan and add the onions. Fry them until they are light brown.
- Add all the ingredients and stir gently. Cover the pan, and stir every few minutes. Simmer for about an hour.
- Add the spinach and continue cooking for about three minutes. Serve immediately with rice or bread.
- Pot Roasted Lamb With Sweet Potatoes
I can’t get enough of lamb. It is such a rich, tender meat when it is fresh and cooked properly. Surely good quality lamb is one of the finest meats we can enjoy! This delicious pot poast employs the tender flavor of lamb with the sweetness and satisfaction of sweet potatoes, creating a wonderful dish everyone will love. Try it!
Ingredients:
Red onions: 2 (chopped)
Garlic cloves: 2 (chopped)
Sweet potatoes: 450g (peeled and cubed)
Oregano leaves (a handful, chopped)
Salt and pepper to taste
Fresh lamb: 1.3Kg
Olive oil: 2 tablespoons
Boiling water: 400ml (replace with lamb stock for extra flavor)
Method:
Preheat the oven to 180°F. Place all the ingredients in a large casserole dish and cover. Cook in the oven for 2 hours. Serve with rice or crusty bread.
